32 - Cream of Tomato Soup

Do you always opt for the store bought can of soup? Have you tried your own home made version? Well, I always went for the can and never thought I could pull off making soup from scratch. That's when I came across this recipe, and oh my god, it looked delicious and simple enough, I just had to try it.

This is the link to the recipe I found - http://www.thekitchn.com/recipe-cream-of-tomato-soup-156693

Paired with some yummy Spinach Pesto Grilled Cheese Sandwiches ( http://artistiquerecipes.blogspot.com/2012/09/31-spinach-pesto.html ), this becomes the lunch for the Gods! :)

Ingredients

Unsalted Butter - 2 tbsp
Onion - 1 small, chopped
Dried Basil - 1.5 tsp
Cloves - Ground, a pinch
Flour - 2 tbsp
Diced Tomatoes in puree - 1 can
Baking Soda - a pinch
Vegetable Stock - 2 cups
Milk - 1.5 cups
Tomato paste - as needed
Black Pepper powder
Salt

Preparation

Melt the butter in a pot. Add the onions to this and cook for about 5 minutes, or until they are transparent and soft. Do not brown.
Add cloves and basil. Cook for 1 -2 minutes. To this, add the flour. Cook for another 2 minutes stirring well.  Add the tomatoes, baking soda and vegetable stock.
Lower the heat and let it simmer for 10 minutes.
Remove from flame. Once it cools down, puree it in a blender. Remember to do this in batches to avoid spills.
Pour this pureed soup back in the pot and bring back to the flame. Add the milk to this and stir to blend well. Add more milk, if required, to achieve the required consistency.
Add a little tomato paste to this for more tomato flavor.
Add salt and pepper.

Serve Hot and Enjoy!! :)

27 - Amma's Potato Sandwich 2

I had promised you 3 sandwich recipes a while back...Till today I couldn't get to making the second variety. Its not much different from the first one. You can find the recipe for that here -  http://artistiquerecipes.blogspot.com/2012/08/24-ammas-potato-sandwich-1.html

I'm just going to mention the differences here between the 2 recipes..

In this sandwich, you boil and peel the potatoes. Mash them well and add salt and pepper , to taste. Mix well, so that the salt and pepper spread every where.
Layer the sandwich as in the other recipe, spreading the garlic - green chilli chutney on 1 slice, adding the potato and then ketchup. Close the sandwich with another slice of bread.

This is a healthier version of the 1st recipe, apt for those who count calories! :)

Serve and Enjoy! :)
