Red Velvet cakes and cupcakes are a huge hit at any party, especially valentines day! Traditionally they go with a cream cheese frosting , but I went with a dark chocolate frosting and they tasted just delicious!
Ingredients
2 1/2 cups all-purpose flour
2 tbsp cocoa powder
1 1/2 tsp baking powder
1 tsp salt
1/2 cup butter,softened
1 1/2 cups sugar
2 eggs
1 1/2 tsp red color
1 tsp vanilla
1 cup buttermilk
2 tbsp water
1 1/2 tsp white vinegar
1 tsp baking soda
Preparation
Preheat the oven to 170 C. Line muffin pan with baking cups.
In a bowl, combine flour,cocoa,baking powder and salt.
In another bowl, cream butter and sugar until light and fluffy.
Add eggs, color and vanilla. Mix well.
Alternately, add flour mixture and buttermilk to the butter mixture. Add water and mix well.
In another bowl, combine the white vinegar and baking soda and gently stir into the cupcake mixture.
Spoon into the baking cups.
Bake for 20 mins or until a toothpick inserted comes out clean.
Cool in pan on a cooking rack for 5-10 mins. Remove from pan, and cool completely. Frost with any icing of your choice.

I've always wanted to make a red velvet...totally inspired by Masterchef Australia. Now for sure, the next time I bake cupcakes, its gonna be the red velvet :)
