I have been in this baking mood for some time now. Cakes, cupcakes, cookies... :)
Recently I made these - Mocha Coconut Cupcakes!
2 tblsp instant coffee
1/2 cup shredded coconut
1 tblsp vanilla
2 cups all purpose flour
1 tsp baking soda
1 tsp salt
Preparation
Preheat oven to 350 F.
Grease a standard muffin pan or line it with baking cups.
Combine instant coffee with water, mix well and set aside.
In a bowl, cream butter and sugar with an electric mixer until light and fluffy.
Combine flour, baking soda and salt in another bowl.
Slowly add this flour mixture to the butter mixture, mix well.
Add the coconut and mix well.
Spoon into the baking cups and bake for 18 - 20 minutes. The centre of the cupcake should soring back when lightly touched.
Cool the cupcakes in pan, on a wire rack, for 5 - 8 minutes. Remove from the pan. Cool completely before using any frosting of your choice.

These are by far the best cupcakes I have made till date!! Soft, chewy, crunchy... yummmmmmmmy! I didnt frost it; I think they are just delicious even without the frosting, so why bother? :)

2 cups sugar
4 eggs
6 ounces chocolate, melted ( preferably unsweetened. I used Hershey's milk chocolate chips)1/2 cup shredded coconut
1 tblsp vanilla

1 tsp salt

Add the melted chocolate,vanilla and coffee mixture. Mix well.Combine flour, baking soda and salt in another bowl.
