17 - Pineapple Turnover Cake

This is an charming, delicious sweet treat is something I baked when we had friends over for dinner. It looks all fancy-schmancy, but its a breeze to make. I served it with a slice of strawberry and a dollop of caramel ice cream - one word - "bliss".




Ingredients

1 cup all purpose flour
a pinch of salt
1 tsp baking powder
1/4 cup sugar
1/4 cup butter
1 tsp vanilla essence
1 large egg
1/4 cup low fat milk

For topping

1 1/2 tbsp butter
1/4 cup brown sugar
5 - 6 pineapple slices (tinned and drained)
strawberries, sliced thin.

Preparation

Preheat oven to 175 C. Grease a flour a baking pan.
Melt the butter for topping in a pan. Add the brown sugar. As the sugar melts and foams, cook on medium flame for a minute and pour into the baking pan.
Over this sugar layer, place pineapple slices and keep aside.
Sieve the flour, baking powder and salt in a bowl. In another bowl, cream butter and sugar to make a smooth, creamy mixture. Add the beaten egg and combine well. Add vanilla essence and combine.
Fold in the flour mixture little by little, alternating with the milk.
Pour this batter over the pineapple layer. Bake in the oven for 30 - 45 minutes or till a toothpick comes out clean. Cool on a wire rack. Put the strawberry slices in between the pineapple slices.
Serve , optionally with some caramel ice cream.
