1 - Yumm Tres Leche Cake

First let me tell you what a Tres Leche cake is. A Tres Leche cake is a sponge cake soaked in 3 kinds of milk  - evaporated, condensed and heavy cream. Doesnt that just sound delicious in itself. Just that definition makes my mouth water :) .


So here is the recipe.Its from one of my favourite recipes blogs Chefinyou .
Ingredients

1 cup all purpose flour
1.5 tsp baking powder
1/4 tsp salt
5 whole eggs, seperated
1 cup sugar
1 tsp vanilla essence
1/3 cup milk
1 can evaporated milk
1 can condensed milk
1/4 cup cream

Method

Preheat the oven to 170 C.
Spray a pan liberally with PAM or grease it with butter.
Sift together the flour, baking powder and salt.
Beat together the 5 egg yolks with 3/4 cup of sugar with an electric beater on high speed, until they turn pale yellow.
Stir in the milk and vanilla. Pour this mixture over the flour mixture. Stir this very gently, until combined.
Beat egg whites on high speed until soft peaks form. Add the rest of the sugar into this, keeping the mixer on. Beat until the egg whites are stiff.
*My egg whites werent getting stiff at all. I just beat them for a good 10-15 minutes, and then proceeded with the rest of the recipe. It still tasted heavenly, so who cares??? :p

Now fold this egg white mixture into the batter very gently.
Pour this into the pan and bake until done. This would be somewhere between 30 and 40 minutes. Check if its done by poking a toothpick through it and checking if it comes out clean.
Combine the evaporated milk, condensed milk and the cream in a bowl.
When the cake is cool, pierce it all over with a fork. Now pour in the milk mixture all over the cake, getting as much around the edges as you can.
Allow this to stand for atleast 30 minutes before serving. Enjoy!! :)

  1. sounds yum. will try it..but no evap. milk here :( will substitute it for something else
